EASY & HEALTHY CHICKEN SOUP
FALL IS JUST AROUND THE CORNER!
It’s not quite here and it’s still hot in Texas but the air feels different and the time change is showing with the evening sun! I’m patiently waiting as I slowly start cooking up cooler weather recipes, everything pumpkin, and those hot yummy coffees!

Since I’ve been focused on gut healing foods and eating foods for health I have learned about the great benefits of bone broth and started incorporating it into my life last year using it for soups or simply just sipping it hot right out of a mug with some fresh ginger, turmeric, and cilantro/parsley.
This year I am trying out a bone broth powder from Naked Nutrition and it was just as good as previous bone broths I’ve used so I am sharing the soup recipe I threw together yesterday!
Recipe Ingredients:
12 fl oz of water
2 scoops Naked Nutrition Bone Broth powder
Handful of chopped celery
Handful of chopped baby carrots
Handful of chopped greens
3 oz cooked sliced chicken breast
¼ tsp of ground turmeric
¼ tsp of ground ginger
Salt and pepper to taste
Fresh cilantro leaves
How to make:
Add the water to a pot on medium heat and whisk in the bone broth powder. The powder doesn’t whisk well in cold water so keep whisking as the water heats up and it will whisk into a bone broth. Toss in the chopped chicken, celery, carrots, and all seasonings.
Stir together and simmer for about 5 minutes.
After everything has simmered, add in the chopped greens, stir and let simmer for about 1-2 more minutes. Turn off the heat, transfer to your favorite fall soup bowl, top with fresh cilantro and you're done!

This soup is so simple to make and it’s a single serving (I usually don’t make multiple serving meals). I really like the idea of a powder, a lot of times I will open up a carton of broth only to use half or a quarter of the container. It then gets stored in the fridge and it may or may not get used before having to throw it out and I hate wasting food.
Anyhow, more fall recipes are coming, stay tuned!
